Wine Profile

Winemaker Notes The fruit was hand picked at 10.5 baume and left to cool down overnight to 5 degrees Celsius with the aid of refrigeration, then whole bunch pressed the next day. The pressing of the whole bunches lasts for 3 hours. This is a gentle method of releasing the juice, so the wine has softness in the mouthfeel. The juice was left to settle in tank for four days before the clear juice was racked off to another stainless-steel tank. The juice was allowed to warm until fermentation began naturally and 25% of the juice was then transferred to older barrels. Once the fermentation began, traditional sparkling yeast was inoculated to the wine.

The barrel ferment component is allowed mature in oak for six months. The batch from reworked cane pruned vines offered a tight acid line to the wine. While the fruit from the old spur vines offered broader spectrum fruit flavour which blended well in the end. The wine components were blended in mid-September and lightly fined with bentonite in preparation for the tirage process.

The sparkling is then sweetened, re-inoculated and bottled with traditional yeast to create fine mousse bubbles and complexity in the wine. This will develop over 11 months ageing in bottle. The bottle is turned occasionally, called riddling, to develop the complex biscuit like flavour with texture. Before disgorgement, the neck of the bottle is cooled down to near freezing to retain the bubbles, the crown seal and a plug of yeast lees is removed before the sparkling wine is corked and ready for enjoyment. No animal derived products were used in making this wine.
