A fresh, medium bodied fruit forward wine with aromas of dark cherry and cinnamon and a slight spritz. 

This wine is made with natural winemaking philosophies in mind and is unfined, unfiltered and preservative free. The aromas are fruit forward and lifted, with dark cherry and spicy cinnamon notes. The palate is fresh and medium bodied with smooth and soft fruit characters. The beautiful, sweet spice character of this wine comes from our old Vosges chardonnay barrels, which are deconstructed, shaved and toasted by a local cooper, then submerged into the tank of wine. Fine tannins from the oak and berries provide structure.

The wine is left throughout winter without the use of sulphur dioxide, at cool temperatures with a small amount of residual sugar remaining. In the spring as the weather warms up, the wine in tank is allowed to warm and as yeast begins to ferment the remaining sugars the wine is bottled. This final fermentation in the bottle contributes a slight spritz to the mouthfeel of the wine.
